De l'encépagement à la conduite des vignes

Vieilles vignes 4 000 to 4 500 grapevines are planted per hectare. Up to 10 A.O.C varieties may be found in all zones: reds on the left bank and in the Cunac, whites on the right bank and in the Cordais.
The vines are generally between 15 and 25 years old, but certain older vine produce excellent sweet wines.
Old vines are kept short, with 4-5 branches, their tendrils pruned down to 2 eyes and the grapes harvested by hand. 60% of the other vines are kept long or short, supported by 3 or 4 wires...

Braucol

Two typical grape varieties give the Gaillac Rouge A.O.C: Duras and Braucol ( Fer Servadou); to these can be added Syrah,Gamay, Merlot and Cabernet Sauvignon.

  • Duras: a Gaillac variety, it gives ruby-coloured wines that improve with age.
  • Braucol: a traditional variety, it gives delicate, coloured wines to be drunk young or aged.
  • Syrah: gives very characteristic and structured, slightly astringent wines.
  • Gamay: a precocious variety ideal for early wines since it gives light, moderately coloured, fruity wines vinified through carbonic maceration.
  • Merlot and Cabernet Sauvignon: not very common in the region, these two varieties yield supple and refined wines that age well.

Loin de l'oeil

All of our white varieties come from " Blancs de Blancs " grapes.

  • Mauzac: the oldest variety, it gives primarily floral (jasmine) and occasionally citrus (grapefruit) aromas. It adapts well to sparkling wines and Perlé.
  • The Loin de l'Oeil ( Len de L'El): very old, typically Gaillacois, it yields a fruity wine. Refined and elegant, it befits dry whites made using the Gaillac method.
  • Muscadelle : a precocious and noble variety, powerfully aromatic, it is used in our sweet Gaillac.
  • Sauvignon: very fashionable, it gives wines with a good balance between acidity and alcohol and suggests floral aromas (acacia, iris) or exotic fruits
